Eggplant Parmesan ala Catherine

 Good morning,

It was Catherine's turn in the kitchen last night.  She had been given some egg plant by a friend so prepared Eggplant Parmesan with spaghetti and meat sauce for us. Of course, we had garlic bread, too.

Thank you, Catherine.  It has been quite awhile since we've had eggplant and it was delicious.

I constantly eat eggplant. I make a paste (after roasting the eggplant) and smear it on a slice of bread as base for other items such as boiled egg, piece of fish, etc...
Tasty and dietetic! Eggplant has a lot of fiber,and this helps maintaining body weight.

Thank you, Duta, that sounds so very good. I'm sure the eggplant is much more healthy than mayonnaise on bread! We'll have to try it here.

This looked like an unusual way to serve eggplant parm and since we just bought an eggplant, I might give it a try it we don't just cube and roast the eggplant which is another way we enjoy it, also much healthier. BTW Lois, thanks for the comment on my anniversary post, it was much appreciated.
