Chicken and Veggies

Good morning,

We're doing that diet thing again.  We have been eating too well calorie-wise so have decided to go to potato-less and bread-less meals three to four times a week. 

Pictured above is roast chicken with an assortment of pretty colors.  I did break down and put some butter on those brussel sprouts. 

This works.

Your plans sound the same as ours, Lois. We have put aside anything white -- pasta, rice, bread, potatoes for the next few weeks. But white cauliflower is OK.

Seeing the brussels sprouts made me laugh at myself! I used to totally not like them. Then I was in the grocery store one day and a woman was filling a bag full of them and I asked her what she did with them! Since that time, I have so many different ways to cook them - and all are good and nutritious!

Looks good. I've been doing the Whole30 again which means no bread, pasta, or rice though surprisingly potatos are okay. I don't think I'd make it without the roasted sweet potatoes this season!
