Apple Cider Bread

Good morning,

Here's something special for Fall.  It's Apple Cider Bread that can be made as above to be sliced for toast and sandwiches, or it can be made as a breakfast bread.

The basic ingredients are:

1 egg
2 T vegetable oil
2 t salt
4 T brown sugar
1/3 cup cottage cheese
8 oz. fresh apple cider
5 cups sifted unbleached flour
4 t bakers yeast

 I mixed and kneaded, then allowed to rise twice before I baked in pans to make four small loaves.  This recipe will make two large loaves if you prefer.  Bake at 350 F in preheated oven for 35 minutes for four small loaves, 45 minutes for large loaves.

If you'd like to make a breakfast bread, make the basic recipe, then add 1 cup chopped walnuts, 1 cup dried apple pieces (or chips), and bake in two round cake pans or similar baking dishes for 45 minutes.  After baking and cooling, ice with white icing or sprinkle with powdered sugar.
