Catherine's Kabobs - Recipe

Good morning,

I don't have to tell anyone with a daughter how great they are.  Our daughter, Catherine made the dinner you see here.

In yesterday's article I wrote about replanting sedum from our home garden into Catherine's raised flower bed in front of her office building.  She and I went to the grocery after that, then came home and she made a quick dinner.  Dinner was so pretty when she put it on the table that I took pictures.  After all, I'm carrying the baby camera in my pocket all the time now to take pictures whenever the grand kids or dogs do something special.

I said, "Catherine, that is so pretty I want to put it on the blog.  Will you put it in recipe form?"

Catherine:  "Sure.  Just put good stuff on a skewer and grill it."

Yep, that's what she did.

So, I'll tell you what's in that picture up there if you can't make it all out:  chicken, sausage, red peppers, mushrooms, cherry tomatoes, and onions.  She tossed all the items in olive oil, salt, and pepper before putting them on the skewers. She grilled it all on a charcoal grill.

The potatoes were simply raw potatoes with skin on, cut, tossed in olive oil with salt, pepper, and a little dry onion soup then baked until soft.

The salad is a Caesar salad.

The three of us devoured it in record time.  Enough said!
OK, now for the reason I didn't publish this yesterday with the transplanted sedum article:  I just couldn't have these pictures here at the same time with the pictures of the snails.  *chuckles*

Have a good one,

Lois

It all looks so good. Kabobs used to be my daughters favorite meal. I usually ask the kids what they would like for their birthday dinner, but think I will just make the kabobs on Theresa's b'day dinner.

Hello friends,

Yes, it was so good. I look forward to more grilling this summer. It's now the official outdoor grilling season in the U.S. so we will have more of it when we get home. At our home, though we grill year round. It's fun to have three of us cooking because we each have a different twist to how we make things.

Thank you for stopping by!

Very best,
Lois
