Chicken Liver Pate - Recipe


Good morning,

You either love this or you you hate it.  There is no middle ground with liver pate.

My family just loves liver pate and when a family dinner event is being planned I am asked, "You ARE going to make liver pate, aren't you, Mom?"

I've made several variations of this over the years, but this is the basic recipe.

Chicken Liver Pate
-----------------------------

Ingredients:

1.25 lbs. chicken livers

4 T butter (1/2 stick)

2 onions

1 T minced garlic

1/2 cup mayonnaise


1 t salt (plain, seasoned, or celery salt)

1 t pepper

1 t parsley flakes (or 3 t fresh parsley)

1/2 t paprika

2 hard boiled eggs (cooled)

Optional:  1 stick celery and/or 1/2 carrot raw added when blending.

In skillet place butter, ONE onion chopped, and liver.

Cook over medium heat until liver is fully cooked, be careful not to burn edges of liver or you'll change the flavor of your pate.

Set aside to cool.

Cut up second onion and place in food processor with 2 hard boiled eggs (cooled), minced garlic, salt, paprika, pepper, parsley, mayonnaise, and cooled liver mixture.

Process until smooth. Texture will be soft, but not runny.

It will thicken/harden when refrigerated.

Refrigerate immediately and serve cold on onion chive bread, matzo or other crackers.

Word to the wise: Rinse liver mixture from your food processor and utensils immediately. After it dries, it's very difficult to remove.

Yep we like pate ... I have never made it myself only just had the bought stuff, so will save this one to try. I love the Honey and oats bread too.
Chicken livers don't last long here cause we love them cooked with chillies and diced tomatoes on rice. Kids won't touch them so it more for us. Have a nice day Rina

I think I tried liver pate' a long time ago and didn't like it. I only like baked chicken livers with bacon. But I think if I tried your recipe, I'd like it. And...our tastes do change from time to time! ...debbie

Well I love chicken livers so I am pretty sure that I would like the Pate! The problem that I have is that no one else in the house will eat it! There are a lot of things that they won't eat that I like :(

Ok, the reactions are in. :) Two like liver pate, 1 might like it, 1 is a definite no. :) Is that a perfect Bell Curve or what?

You're right, Debbie, tastes do change. That is what I say to the kidlets when they say they don't like something: "That's OK, But, try it again in a couple of years. As you grow up, your tastes will probably change and you may find you like it." That's worked with a number of foods. :)

Count me as one of the "love liver pate" people! Thanks for the recipe -I'm always looking for things to serve friends when they come. Is there a recipe for the cream cheese chive bread? I couldn't find it. I've just planted chives so I have to make that too!
