Chicken and Spinach Salad

Good morning,

This was a very good meal!  It's chicken salad made with the chicken left over after we had smoked (by My Honey) chicken for dinner the night before.  I also made the bread.

Here's my recipe for the chicken salad if you'd like to give it a try:

baked or roasted chicken - cut in chunks - about 2 cups
1 small can of mandarin oranges, drained
2 hard boiled eggs, diced
1/3 cup walnut pieces
1/3 cup cran raisins
1/4 cup diced celery
1/2 t pepper
1/2 t garlic salt
1/2 t onion powder
1/2 cup real mayonnaise

Mix all ingredients, serve on a bed of spinach leaves with sliced tomato and fresh bread.

Yum!

It's time for us to go South again.  Watch this space for a road trip and time at sea.  :)

This salad is one we will certainly try, Lois. We have been buying rotissiere chickens and using it for several meals, including a Cobb salad variant that I posted about recentky. Always looking for new ways to prepare salads. Looking forward to more adventures at sea and have a safe journey getting to Fl.
