Fish Cakes - Recipe

Good morning,

My Honey made the Fish Cakes for this wonderful end-of-summer meal.  What are Fish Cakes, you ask?

Fish Cakes, a regular dish in Norway, are made somewhat like salmon croquettes, but have a different flavor.

Here is My Honey's Fish Cakes recipe:

Ingredients:

2 pounds Talapia (or cod or other ocean white fish)
4 eggs
3 1/2 t salt
1 t Nutmeg
1 t Ginger
2-1/2  +  T Potato Starch (Finely ground white wheat flour can be substituted. Do not use self-rising flour.)
5 oz. milk
5 oz. heavy whipping cream
3 or 4 pieces of green onion finely chopped
2 small white onions chopped finely or minced with fish (or 1 red onion, 1 white onion)
Pepper to taste
1 T minced garlic (optional) 
Butter for frying

Directions: 


Mince the fresh fish.  



Mix with the other ingredients.Place fish mixture in refrigerator for two hours to marinate before frying.
 Preheat butter to medium heat until just beginning to turn brown in frying pan.  Form fish mixture into patties.

 
Place in frying pan.




Fry for four minutes or until brown on each side.  Do not allow to cool before serving by placing in warmed covered dish.
Serve immediately with seafood cocktail sauce if desired.

While My Honey made the Fish Cakes, I took pictures and made the sides (salad, baked potatoes, bread) for this delicious dinner.

What a team! Those fish cakes look yummy. I wish I were a better cook. I do cornbread and chili but that's about it.
Jilda, however is a great cook and we eat well.

The fish cakes that I know are fish and potatoe and rolled in breadcrumbs. Come to thing of it I've not had any for a very long time.
