This Week's Cod Casserole

 Good morning,

We have baked cod at least once a week now so I keep trying to come up with new and delicious ways to prepare it.

Above you see this week's concoction that turned out to be excellent.  

In the Corning dish in order added:

1/4 cup lemon juice

4 pieces frozen cod (defrosted)

a handful of baby carrots

a few whole strawberries

shredded cheese (your choice)

I baked at 35 mins at 350 F.

My only regret was we didn't have more pieces of fish.  We gobbled it all down and would have eaten more if we had had it.

How do you prepare cod?

Your dish looks delicious! I use salt, pepper, mayonnaise and panko bread crumbs. Bake for 20 minutes at 350. Gigi hawaii

Oh, that sounds good, Gigi! I'll have to try that, too.
