Breakfast for Dinner

Good morning,

We love breakfast for dinner at our home.  Actually, breakfast is welcome at any time of the day or night.  Pictured here is the quick and easy version.
For this particular breakfast, I made onion baked potatoes.  These are super simple.  scrub and cut up enough potatoes to serve your crowd.  I used about six medium potatoes for this batch.  We like our potatoes with the skins on.  Toss with 2 or so tablespoons of olive oil.  Pour contents of one envelope of Lipton Dry Onion Soup mix on the top and toss.  Bake at 350 for one hour.  Yum!
Fry up some bacon...
...and warm up some Busch's Original Baked beans.
Of course, we served my home made bread.  Do you know what is on the bread in the image above?
 It is Cod Roe aka Cod Caviar.  It is one of those Norwegian treats that My Honey loves with breakfast.

Breakfast is my favorite meal. I do my potatoes like that also and they are yummy!!!

We also love breakfast any time of the day. Sunday brunch after church is always scrambled eggs with whatever I have on hand to toss in - onion, cheese, peppers, mushrooms - and toast and tea. We don't eat bacon very often but enjoy it now and then. Yum!

We eat breakfast at any time of day, too. I like bacon and eggs and toast...maybe a few hashbrowns.

Then Roger also makes this breakfast...he peels and cuts up one or two potatoes...into sort of small bits but not tiny. He boils them real hard for just a few minutes...they start to get tender. He takes them out and starts frying them....and in the meantime he fries some sausage...and in it he has cut up some onion and bell pepper...as the sausage gets done, he will stir in eggs and mixes them all together..oh, and he adds the potatoes to this...oh, this is so good. I am never sure if it is so good because it is so good, or if it is because I didn't have to cook it.
