Garlic Shrimp

Good morning,

I had some fresh spinach in the house and decided to make it as a side dish that turned into the main course.  This is even more yummy than it looks.

If you want to try it, here's an estimate of what's in it.  I went through the fridge and got out what we had and this is the result:

4 strips of bacon, cut in pieces
1/2 medium onion

Gently fry the bacon in a large skillet.  Add the onion when the bacon is almost finished.  Continue frying until onions are clear.

add:
about 6 large fresh mushrooms, diced
about 6 cups fresh spinach
2 cloves garlic crushed
1 cup white wine

cover and simmer until spinach wilts  (about four minutes)

add defrosted shrimp (be sure to take the tails off first).  For this I used a large bag of large size pre-cooked cocktail shrimp.  Cover and heat just until shrimp is hot in the dish.

This would be good served over rice, but we didn't want to wait to make rice.
