Good morning,
My Honey recently made salmon cakes. These don't have any filler so are glucose free for those who are concerned about such things. We are happy not to have the filler for the calorie savings.
After these were made I missed taking pictures of the table and the salmon cakes on a plate. I guess that's because we ate them so quickly. ;)
Anyway, I asked My Honey for his recipe and here it is if you would like to try them. I wrote down his recipe just the way he told me. ;)
Salmon Cakes
Note: Amounts are "about" and "between this and that." Look at it as you make it and work for the consistency in the top picture.
Ingredients:
About 3 pounds very fresh salmon
4 to 5 Tablespoons sour cream
1-1/2 to 2 teaspoons salt
2 to 4 Tablespoons lime juice
3 to 4 Tablespoons Aquavit (that's a Norwegian "shooter") or Cognac or Bourbon - your choice
white pepper to taste
green onion - 1/3 cup chopped
red onion - 1 medium - chopped
small amount of olive oil
Instructions:
Remove skin from salmon, chop into "hunks" (another technical kitchen term), wash, then dry. Place hunks in food processor and chop - do not blend, just chop. You don't want your mixture to be mushy.
Add other ingredients except olive oil and mix until blended.
Form into patties and fry 4 to 5 minutes in a small amount of olive oil. Turn half way through fry time.
Serve warm. Refrigerator (any) left overs.
They're also good the next day cold on a sandwich made with home made bread. ;)

I can eat salmon patties, thoughI am not crazy about them, but these look so good I would have to eat them just cause they are look sooooo good...

They do look good, but I must admit we're not fish eaters. Prob'ly should be, for the Omega 3's !!
