Gravlaks and Gravlaks Sauce - Recipe


Good morning,

My honey prepares Gravlaks that we all enjoy.  It takes three days to prepare so requires some planning if you want to serve it for a special occasion, but it is worth the wait.

Gravlaks is fresh salmon that is not cooked.  It is "cured" with sugar, salt, and alcohol that gives it a unique flavor.

I prepared the bread, eggs, and gravlaks sauce.  This is a fun kitchen joint effort project with yummy results.  :)

Ingredients:

A FRESH side of salmon

3 T salt

4 T sugar

A liberal amount of dill - see image

Aquavit - 3/4 to 1 cup depending on size of salmon.

Gravlaks preparation:

Be sure to ask about the freshness of the salmon you purchase.  If it has been out of the water for more than 24 hours, it's too old.

Place skin side down on working surface.  Rub salt, sugar, and dill on the salmon.  

Cut the side of salmon in half.  Place the first half in a plastic container skin side down.  Cover with Aquavit.  Place second half on top skin side up.

Cover container tightly and place in refrigerator for three days.  Each day, open container and turn so each piece of the fish is completely covered.

Slice to serve:

Using a fish or other sharp knife and a cutting board, cut away from the skin in thin slices on an angle.

Serve cold with scrambled eggs, gravlaks sauce, and bread.

Refrigerate any leftovers.

Leftovers are good for no more than two days.

Gravlaks Sauce
----------------------

Ingredients:

1/3 cup sour cream

1/4 cup dijon mustard

1 T lemon juice

1 T dill weed

Combine all ingredients, stir with whisk, and chill for 1 hour before serving.

Prepare Scrambled Eggs with Chives
--------------------------------------------------

Ingredients:

12 eggs

1/3 C whole milk

1/3 cup chopped chives




Scramble and cook eggs.  

Serve warm with gravlaks.

Build Your Own Open Face Gravlaks Sandwich
---------------------------------------------------
Place a piece of bread on your plate.

Spread the sauce on the bread.

Add a layer of gravlaks.





 Pile some scrambled eggs on top.










EAT!

Alternate Gravlaks sauce recipe:

1/3 cup mayo
1/3 cup grainy mustard
1-2 tbs sugar
1 tbs vinegar
dill

Mix and refrigerate prior to serving.

OOOH!! doesn't that sound and look yummy. I love salmon, but Bob doesn't. I keep telling him he is really missing out on something yummy! looks wonderful! How's your trip?! We are in for a fierce thunderstorm, but so far, no rain.
Took Lincoln to the dog park and he is all pooped out!! ...debbie

Yes, Saskia, I am having a great, but busy weekend. I'm still thinking about those beautiful pictures of chocolate you have on your blog. Mmmmmm. :)

Debbie, the trip is great. We took three days to get to Flordia and enjoyed it all. It was a joint effort to take pictures as my honey pushed the window button for me so I could take pictures out of the window. I've just started to work over the pictures and will probably have some of them starting on Tuesday morning.

Oh, Debbie, thanks for the poop report! That's important information in our home, too. :))
