Good morning,
This was a very good meal! It's chicken salad made with the chicken left over after we had smoked (by My Honey) chicken for dinner the night before. I also made the bread.
Here's my recipe for the chicken salad if you'd like to give it a try:
baked or roasted chicken - cut in chunks - about 2 cups
1 small can of mandarin oranges, drained
2 hard boiled eggs, diced
1/3 cup walnut pieces
1/3 cup cran raisins
1/4 cup diced celery
1/2 t pepper
1/2 t garlic salt
1/2 t onion powder
1/2 cup real mayonnaise
Mix all ingredients, serve on a bed of spinach leaves with sliced tomato and fresh bread.
Yum!

ReplyDeleteThis salad is one we will certainly try, Lois. We have been buying rotissiere chickens and using it for several meals, including a Cobb salad variant that I posted about recentky. Always looking for new ways to prepare salads. Looking forward to more adventures at sea and have a safe journey getting to Fl.
